Vinification
A slow pneumatic press for gentle juice extraction. Juice settled over 1 week for natural clarification at low temperature. Roussanne and Marsanne blended and aged in tank for 12m. After a light filtration, the wine is bottled with minimal added sulphur to protect the wine.
